SCONES

Ingredients:

  • Plain flour for dusting
  • 3 cups *self-raising flour
  • 80g butter chilled and cubed
  • 1 cup milk
  • Jam, to serve
  • Whipped cream, to serve

Method:

  1. Preheat oven to 200 degrees.
  2. In a large mixing bowl add *SR flour, and then using your fingertips rub butter into flour until combined and the texture is akin to breadcrumbs.
  3. Make a well in the centre and add milk, using a spatula mix until a loose dough is formed.
  4. Turn out onto a clean and lightly floured surface and knead dough to properly combine.
  5. Pat dough into a 2cm thick round and then using a 5cm cookie cutter or glass cut out rounds, reforming dough as needed.
  6. Place on a baking tray and lightly dust with flour. Bake for 20-25 minutes then transfer to a wire rack to cool.
  7. Serve with jam and whipped cream.

*Pro Tip: to convert any of our plain flour into self-raising, just add 1 ½ tsp of baking soda per cup of plain flour.
