Watch how we made our Superfood Loaf into this Miso Parmesan crusted breakfast delight!

All we did was take our beautiful seeded Superfood bread, spread on some butter and white miso paste, gave it a sprinkle of Parmesan cheese and broiled it for a hot minute.

You can eat it like this and it’s amazing I promise! You can tell because I hid it underneath but I did have a bite before the toppings went on.

As a colourful serving suggestion, we recommend spinach, chilli, mushrooms, scrambled eggs with a dash of cream seasoned with salt, pepper and chives, toasted pine nuts, fried onions, and an extra sprinkle of Parmesan.

Tuscan Marinated Chicken Strip Burrito 🌯

We made this using our Spelt Wraps filled with the marinated chicken, rice, some veg and served along side a curried veggie soup in lieu of a dipping sauce!

Our wraps are rather thicker than a tortilla so we recommend wrapping in baking paper or foil and popping them in a sandwich press to help them stay together. But it works like a treat 👌

Our wraps are available in Spelt, Khorasan, Hemp, Chia and Quinoa

Ingredients for marinade:
- 1/4 cup sundried tomatoes
- 1/4 cup roasted capsicums
- 1/2 cup olive oil (can use the oil from the tomatoes and capsicums for extra flavour)
- 1/4 grated cheese
- Tablespoon crushed garlic
- Tablespoon mustard
- Good handful of basil
- Salt and pepper to taste
Method:
- Chuck everything in a food processor and blend.
- Add more oil if you need to loosen it a little.
- I liked mine a little chunky cause we’re going to bake it and the marinade will thicken into a sauce nicely.
- Slice up your chicken strips and pop into a freezer bag with your marinade and leave for at least 30 minutes.
- Bake in the marinade until chicken is cooked through. Remove the chicken to avoid dryness and put marinade back in the oven to thicken.

Ingredients for ragu: (this is a big batch, we made 3 pies and used about half the ragu which we will use in more content to come)
- 500g sliced mushrooms
- 1 large yellow or white onion, finely diced
- 3 celery stalks, finely diced
- 2medium carrots, finely diced
- 2 tablespoons crushed garlic
- Fresh red chillies deseeded to taste. We used 3
- 2 cups veggie stock
- 2 cans crushed tomatoes
- 1 tablespoon dried oregano
- 1 cup heavy cream (optional)

- 3 potatoes
- Cream
- Parmesan cheese to taste
